Chicken Breast:
Chicken Breast……………..1 piece of 200g
Salt……………………………..1 pinch
Black Pepper………………..1 pinch
Olive or Corn Oil……………5 ml
Spaghetti:
Spaghetti……………………..50 g
Whipping Cream…………..50 ml
Whole Butter………………..10 g
Garlic…………………………..2 cloves
Parmesan Cheese………..10 g
Salt……………………………..1 pinch
Pepper……………………….. 1 pinch
A la Talla Sauce:
Guajillo Chile………………. 6 pieces of 40g
White Onion……………….. 1/2 piece of 140g
Tomato……………………….. 2 pieces of 260g
Bay Leaf……………………… 3 leaves
Saint Leaf……………………. 1/2 leaf
Garlic………………………….. 1 clove
Olive Oil………………………. 5 ml
Salt……………………………… 1 pinch
Pepper………………………… 1 pinch
Green Tomatillo Sauce:
Tomatillo………………………5 pieces of 220g
Garlic…………………………..1 clove
Serrano Chile……………… 4 pieces 50g
White onion………………… 1/2 piece of 140g
Coriander…………………… 15g
Avocado…………………….. 1/2 piece of 110g
Salt……………………………. 1 pinch
Pepper……………………….. 1 pinch

1.- A la Talla Sauce preparation
-Bring water to a boil in a pot.
-Add Onion, tomato, guajillo chile, garlic, bay leaf and Saint Leaf.
-Let it boil for 10 minutes. -Blend it.
-After all the ingredients have been blended , place it in the hot pan with olive oil/ corn oil.
-Add salt and pepper to your linking.
-Let the sauce cook.
2.- Green sauce with tomatillo and avocado preparation
-Add Serrano chile, garlic, tomatillo, salt and pepper with a little water.
-Blend all the ingredients.
-Add chopped coriander and chopped avocado.
3.- Spaghetti preparation
-Bring water to a boil in a pot.
-Add some Bay Leaves and olive oil to water.
-Add the spaghetti into the water and let it boil for another 5 minutes.
-Remove pasta from water and let it cool.
-Place a pan to heat up with olive oil.
-Add pasta with garlic, whole butter, salt and pepper.
-Cook for 5 minutes while mixing all the ingredients.
4.- Chicken Breast Preparation
-Place a pan to heat up.
-Add Olive Oil to the Pan.
-Place the chicken breast skin down seasoned with pepper and salt in the pan for 10 minutes.
-Add mayonnaise on top of the chicken breast.
-Add the “A la Talla” sauce on top of the mayonnaise.
-Gratin the sauce with a blowtorch.
5.- Dish assembly
-Place the spaghetti on a side of the plate with some parmesan cheese.
-Place the chicken breast in the center of the plate.
-Add the Tomatillo Sauce on top of it.
